Does vinegar actually kill weeds?
Yes, and far less well than the recipes suggest. The distinction that decides everything is that acetic acid is a contact herbicide, not a systemic one. It destroys cell membranes in whatever tissue it lands on, the plant loses moisture, and the foliage dries out. It does not move through the plant, so the root system is untouched.
That is why the results look spectacular and then disappoint. Within 24 hours the weed looks dead. A week or two later, anything with a functioning root regrows from it.
University of Maryland Extension puts the workable window narrowly: 5 to 10% acetic acid gives viable control of very small weeds carrying only one or two leaves, roughly within two weeks of germination. Weeds past three or four leaves are likely to survive. Illinois Extension reports that studies find concentrations of 10 to 20% deliver 80 to 100% control — which is a useful number precisely because it is not what is in your kitchen.
And there is a species pattern. Broadleaf weeds are more susceptible than grasses. Grassy weeds such as crabgrass discolour and then recover. Dandelion and Canada thistle, both heavy taproots, generally get top kill and nothing more.
The recipe, and what each ingredient is doing
Almost every version online is the same three things: roughly a gallon of white vinegar, about a cup of salt, and a teaspoon of dish soap. The parts are not equally useful.
- Vinegar is the active ingredient. The acetic acid does the killing.
- Dish soap is a surfactant. It breaks surface tension so the solution spreads across a waxy leaf instead of beading off. This part genuinely helps and is the least controversial ingredient in the mix.
- Salt is the problem. It contributes some desiccation, and it is the one component with a consequence that outlasts the application.
Application volume matters more than people expect. A USDA-ARS study found that 20% acetic acid applied at high volume produced crabgrass control in the region of 28 to 45% — note that even at four times kitchen strength, on a grassy weed, that is a partial result. Light misting achieves almost nothing regardless of concentration.
Kitchen vinegar and horticultural vinegar are not the same product
This single point explains most of the gap between the enthusiastic blog post and the disappointed reader.
Household white vinegar is 5% acetic acid. Herbicidal or horticultural vinegar is sold at 20% or 30%, and some products go to 45%. That is four to nine times stronger, and the research showing 80 to 100% control was not run on salad vinegar.
It also stops being a harmless kitchen item at that strength. Concentrated acetic acid is corrosive — it will damage eyes and skin, stain or corrode metal tools, fences and furniture, and it needs eye protection and gloves. The EPA recognises acetic acid as an approved herbicide active ingredient under its minimum-risk pesticide provisions, which is a regulatory category, not a statement that it is safe to splash about.
Conditions matter too. Acetic acid works fastest in hot, bright, low-humidity weather, and you need a stretch of dry hours afterwards — rain within a few hours of application dilutes it before it has finished.
It will brown your lawn
Vinegar is non-selective. It has no way of distinguishing between a weed and turfgrass, because the mechanism is chemical burn on contact rather than anything targeted at a particular plant family.
Spray a dandelion in the middle of a lawn and you get a brown circle of grass around it. The grass usually recovers, because turf grows from a crown at soil level that a surface spray does not reach — but you have a scorched patch for several weeks, and you have not killed the dandelion either, because its taproot is untouched.
This is the reason nearly every article ranking for these recipes is quietly about hardscape. Look closely and they are photographed on driveways, patios, gravel and path cracks. That is the correct use. If you are standing on a lawn, this is not the product, and no amount of technique changes that.
The salt is the part worth thinking about
Acetic acid breaks down quickly in soil. Its effects on soil pH and soil microbes are generally reported as minimal and short-lived, which is a genuine point in its favour.
Sodium chloride does not break down. It dissolves and it moves, and where it moves is not your decision. In a climate with decent rainfall, salt applied to an open driveway will largely leach away over a season. In a raised bed, a container, a planting strip against a wall, or anywhere arid, it stays in the profile — and repeated applications to the same spot compound it. Sodium degrades soil structure and interferes with water uptake, which is why salt-affected ground grows things badly long after the original weed is forgotten.
The practical rule: if there is any chance you will want to grow something in that spot later, leave the salt out. The vinegar and the surfactant do the actual work anyway.
Boiling water and dish soap on their own
Boiling water is the most underrated option on this list and the only one that costs nothing. Poured directly onto a weed in a paving crack it destroys the tissue immediately, and unlike salt it leaves nothing behind. It has the same limitation as everything else here — it does not reach a deep root — so expect to repeat it. For a path or a patio, it is genuinely competitive with the vinegar mix.
Dish soap alone is not a herbicide. It is a surfactant and it belongs in a mix rather than being the mix.
One honest note on the whole category: contact herbicides kill whatever they touch. Insects and the occasional amphibian sheltering in the weeds you are spraying are included in that. “Natural” describes where the molecule came from, not what it does on impact.
What to use on a lawn instead
If the weeds are in turf, you want the opposite properties: selective, so it leaves grass alone, and systemic, so it travels to the root of a perennial rather than scorching the top.

If you want a non-synthetic option for a lawn specifically, the honest answer is that there is not a good one. Citrus-oil and fatty-acid products are non-selective too — organic does not mean lawn-safe. The genuinely effective low-input approach on turf is cultural: mow high, feed adequately, overseed thin areas, and let a dense sward crowd weeds out. It is slower than a spray bottle and it is the only thing that compounds.
